List of Ingredients
- 250 g all-purpose flour
- 120 g brown sugar
- 100 g butter
- 1 egg
- 1 tsp cinnamon, 1 tsp ginger, 1 tsp cloves, 1/2 tsp salt
- 1 lemon
* if your cookie dough is too crumbly, add a few tablespoons of milk (dairy or nut milk)
Letβs bake some cookies!
1. Measure your dry ingredients: all-purpose flour, sugar, and spices. Add them to a large bowl and mix with a whisk until well combined.
2. Zest one medium lemon and add to the mix.
3. Slightly melt the butter (like almost liquid, but not entirely ), and mix with the dry ingredients. Once itβs fully incorporated, fold in the egg.
4. Once your batter looks more like a dough, pour it on your working surface and knead until nice thick ball forms. If your dough is too crumbly and itβs not coming together, add a few tablespoons of milk (dairy or nut milk). You should be able to roll it out without cracking it (too much).
5. Place the dough on a large piece of plastic wrap and let it chill in the fridge for 1-2 hours. You may skip this step and roll it out immediately, but chilling will allow the flavors to combine nicely.
6. Once you are ready to bake, remove the dough from the fridge, let it come to room temperature for 10-15 minutes, place it on a lightly floured surface, and start rolling it out.
7. Use a floured rolling pin to roll the dough evenly until it reaches the desired thickness (up to you).
8. Get your Atlympics Medal and shape your cookies! You can cut out the logo, color it with cocoa powder, or get creative in your way! I used all the methods I came up with and even shaped a giant logo cookie by hand. πͺ
9. Transfer your Confluence cookies to a parchment-covered baking sheet.
10. Bake at 160Β°C / 320Β°F for about 10 to 12 minutes, or until the cookies are golden around the edges. Remove from oven and transfer to a wire rack to finish cooling.
11. Once the cookies cool down, decorate them with icing, powdered sugar, or any jam you like. π
12. Store in a cookie jar for up to a weekβ¦
